Quality analysis of irradiated ready-to-eat spinach leaves using image processing techniques

Abstract

The need to evaluate technologies to treat fresh fruits and vegetables for pathogen reduction is emphasized by foodborne disease outbreaks associated with bagged spinach. Electron beam irradiation has been shown to inhibit pathogens; however, it is still a challenge to destroy the pathogen while preserving the produce quality. Consumers initially accept or reject a food based on its color. Our objective was to quantify the effect of low dose e-beam irradiation on spinach leaves through color textural analysis, which is infeasible with traditional colorimeters. Bagged spinach leaves were placed in Petri dishes, and exposed to 2.0 MeV electrons with six different doses (0.2, 0.4, 0.6, 0.8, 1.0, 1.2 kGy). The samples were scanned using a high resolution flat-bed scanner. Algorithms for image segmentation (edge detection, thresholding) and textural features (uniformity, smoothness, contrast, and entropy) generations were developed in MATLAB. Non-irradiated samples were served as controls. No significant differences in color features were found among control and irradiated samples up to 14 days. Uniformity at samples exposed 1.2 kGy showed significantly low, due to some wrinkles caused by irradiation. All irradiated samples showed higher contrast and entropy values than controls, which were intact from irradiation, during the entire period of storage. Smoothness of spinach leaves didn’t change (p>0.05) by day 14. For all treatments, total area of leaf was decreased by the same rate (0.5%/day) due to its respiration. Low dose irradiation could maintain the quality of bagged spinach leaves throughout the shelf life.
