Abstract
The dry process is to enhance the storage period and transportation convenience of food. Some foods were shown higher nutritional contents than raw materials after drying. To analyze the drying efficiency of the boiler dryer, drying comparative experiment was conducted with hot-air dryer as the comparatives. Initial moisture content and weight of moisture that needs to be evaporate were calculated and T/W (Time vs Weight), T/T (Time vs Temperature), T/H/ (Time vs Humidity) and energy consumption were analyzed. Considering the volume differences between two dryers, the boiler dryer has 3 times higher drying efficiency than hot-air dryer.
